Description
The small yellow specks on the outside of a strawberry are its true fruits, each holding a single tiny seed. After strawberries are pressed for juice and purée, the leftover pulp is sieved and washed to recover those seeds, which are dried and pressed. Each berry carries only around 200 seeds, so a large volume of fruit is needed for a small amount of oil. The oil is pale green to golden with a faint, fresh, green scent.
